Xinjiang Pilaf: A Hearty Rice Dish from the Silk Road

Super Simple Steps!

  1. Soak the rice for 30 minutes in advance!
    Don't skip this step! It makes every grain soft, chewy, and super flavorful.

  2. Fry the onion in a little more oil over medium-low heat until golden brown and fragrant. Set aside for later.

  3. Use the onion-infused oil to pan-fry the lamb ribs!
    Sear both sides until slightly charred — the meat aroma will instantly explode!

  4. Add the red and yellow carrots and stir-fry a few times so they're coated in the fragrant oil — it takes the texture to the next level.

  5.  Add salt and cumin to taste!
    Go a little heavier on the salt — the rice will absorb a lot of it, so don't be shy! Stir everything evenly so every piece is well seasoned.

  6. Add boiling water until it just covers all the ingredients. Bring to a boil over high heat, then reduce to low and simmer for 15 minutes.

  7. After simmering, scoop out some of the broth (to prevent the rice from getting too soft!). Transfer the lamb ribs and carrots into your rice cooker and spread them evenly.

  8. Add the soaked rice on top, then pour in the reserved broth so the liquid level is just slightly above the rice — that's the sweet spot.

  9. Start the regular rice-cooking mode on your rice cooker. Sit back and wait for the magic to happen!
